Is it possible we’re already a third of the way through summer? Crazy pants! Here are this week’s lunches:
Monday
Wyatt was home sick Monday, so no lunch.
Tuesday
Tuesday, I packed Augie’s lunch in one of my new bento boxes. This box is a little deeper than the ones I’m used to and it was kind of an interesting change to have a bunch of vertical piles of food. I packed canned peaches (with a food divider on top to try to contain any extra moisture, wheat thins, grape tomatoes and turkey meatballs.
Wyatt’s lunch was packed in our Laptop Lunch box: turkey meatballs, garlic naan, a tub of applesauce, blueberries and a blueberry cereal bar.
Wednesday
Augie’s lunch on Wednesday was…interesting. I hadn’t visited the grocery store in quite awhile and it felt like all the stuff I normally pack in the kids’ lunches was either gone or kind of iffy so I had to use all of my skills of resourcefulness to pull a meal together. I started by pulling the meat off the last hoisin chicken drumstick from dinner the night before (which Augie is now referring to as “poisin chicken” — heh.). Then I dug a couple jars of canned cherries that I put up last summer out of the cupboard and added those. Next, I found a jacket and went out to the very cold and foggy garden and picked some strawberries. (Very Ma Ingalls of me!) Finally, I put in the last Triscuits in the box and a handful of borderline grape tomatoes.
Wyatt’s lunch was assembled using the same foraging techniques: wrinkly-but-not-moldy tomatoes, some tofu that was one day past the sell by date, home canned cherries, the last scraps of garlic naan, a blueberry bar and strawberries from the garden.
Thursday
Ahhhhhh….I’m so thankful to have a husband who will run out to the store for provisions after the kids are in bed and I’m already in my jammies! When Thursday morning dawned we were fully stocked with lunch fixin’s again which was great because someone took my phone from my bedside table in the morning while I was fast asleep so he could sneak a few games of Where’s My Water and didn’t bother to come get me when my phone alarm went off so I slept really, really late. Hurry, hurry, hurry means very simple lunches.
All that to tell you that Augie had a turkey and mayo sandwich, raspberries, and celery sticks.
Wyatt had the same, but I swapped tortilla chips in for the celery because he won’t eat it.
Friday
Today Augie had Triscuits, raspberries, carrots with edamame hummus for dipping (in the green tub) and leftover grilled chicken.
Wyatt’s lunch was the same except I didn’t include the dip because he decided he doesn’t like it anymore and I threw in a blueberry bar for his morning snack.
