I’ve pumpkins on the brain, so there are a few pumpkin/Halloween lunches in the mix this week. Enjoy!
On Monday, Wyatt’s lunch and snack were packed in the Laptop Lunchbox: pretzel slims, strawberries, homemade applesauce, Laughing cow cheese wedges and teriyaki baked tofu that I cut and decorated with food-safe markers. I was worried the applesauce would leak on the rest of the lunch so I wrapped it tightly with plastic wrap to keep it contained. I know it worked because Wyatt didn’t eat it and when I opened the box at the end of the day, it hadn’t leaked at all.
On Tuesday, Augie had leftover pork chop from dinner the night before that I cut into small chunks, grapes, garlic naan cut into pumpkin shapes and decorated with food markers, and fig from our backyard tree.
Wyatt also had pork that I threaded onto pumpkin picks, grapes, apples, pumpkin face Joe-Joes cookies, and garlic naan pumpkins.
On Wednesday, Augie had heart-shaped sandwiches filled with bean dip, peanut butter pretzels, deli turkey, strawberries and grapes.
Wyatt ate school lunch.
Man, I did not feel like making lunches on Thursday. The kids were extra feisty, I’d stayed up too late and over-slept and lunches were the last thing I wanted to do. I’d packed a bit of the lunches the night before though, so that gave me some motivation to get it together.
Augie had grapes, garlic naan cut into a firetruck shape, deli turkey and a fig.
Wyatt had Laughing Cow cheese, the last of the bag of pretzel thins, strawberries, garlic naan chunks, baked tofu and a few grapes.
On Friday, I made Augie some fancy flower sandwiches. I cut garlic naan into flower shapes then topped them with soy cheese and turkey that I’d also cut. The scraps and a bit more cheese and meat were tucked inside the sandwiches. He also got some strawberries and tomatoes from our garden.
Wyatt begged me to have school lunch and I let him.
