Broccoli Almond Soup

Broccoli Almond soup is packed with veggies! The ground almonds are an unusual addition but they match beautifully with the broccoli and add creaminess. They also give the soup an extra boost of protein and help to make it quite filling.

Because there’s no dairy, this soup freezes beautifully. Make a big batch, portion it out into individual servings and then pop it into the freezer so you can pull one out for lunch on those days when you’re rushed.
