Muffin Tin Monday: St. Patrick’s Day

St. Patrick's Day Muffin Tin Meal

The theme for this week’s Muffin Tin Monday was St. Patrick’s Day and even though I was one day late for the holiday, I decided to whip out a quick muffin tin meal with this theme for Augie.

Since I hadn’t pre-planned any of the elements in this lunch, I had to wing it based on what was in our fridge, but I was pretty happy with what I came up with and Augie thought it was fun too. The over-riding theme was “green” but I managed to come up with explanations for the other items I included too.

Top row:

  • Green grapes
  • Leprechaun bow ties — this was just leftover pasta that I heated and tossed with a little butter and garlic salt
  • cucumber coins

Bottom row:

  • pistachios — They’re kinda green, right? I put them in a green silicone muffin cup to make them greener
  • celery sticks with peanut butter in a rainbow box for dipping
  • goldfish crackers to represent a pot of gold.

I served all of these in 6 cup muffin tin that I reserve for muffin tin meals so it wont get all messed up.
