I think I’m starting to sound like a broken record here, because I say this about practically every Tuesday lunch, but I had to scrounge to put this lunch together. We were out of everything it seemed like — milk, eggs, fresh fruit, fresh veggies, cheese, proteins. Our fridge looked pathetic! But this is where a good pantry and a little frugality came in and saved the day! I pulled a tub of mandarin oranges out of the cupboard and some mini-meatballs out of the freezer. Then, I used the last little bit of garlic naan leftover from our curried chicken dinner the night before. That’s one great thing about bentos — you can use just a little bit of food remaining after another meal. Waste not, want not, right? In any case, by having a lot of stuff around, I managed to put this lunch together in about 5 minutes (most of the time was spent heating up the meatballs and then cooling them back down). Of course, Wyatt barely touched his lunch this day, but it wasn’t for a lack of trying.
I went with a bit of a nautical theme for Wednesday’s bento lunch, using turtle and dolphin picks to spear some deli turkey roll-ups and cutting a boat shape out of the bun. You’ll also note my clever use of a blue bento box to denote “water”. Other foods included in this lunch are the ever present blueberries and a low-fat mozzerella cheese stick.
Thursdays lunch had leftover pork tenderloin cubes from dinner the night before (Wyatt looooves these — go figure), blueberries, strawberries and some pretzels.
I had big plans for Friday’s lunch. It was going to be a Valentine’s spectacular with all kinds of hearts and stuff. But then Thursday night I got food poisoning and I was half dead on Friday morning. Zach put a lunch together for Wyatt, but he forgot to take a picture. So there you have it — maybe next year.
