The store bought ones are really just little pieces of cake and I know that if I make them myself they'll be healthier (and cheaper). This batch had 12 muffins and I froze half of them right off. When I want to put one in a lunch, I just pull it out of the freezer and microwave it for 10 seconds. My son loooooves them.
