We got a bag of fava beans in our first veggie box last Friday, and when I saw them I groaned out loud. I think fava beans are delicious, but we got them once in our veggie box about five years ago and I still remember vividly how much of a pain they were to prepare. With this batch, it took me about an hour to prepare around a cup of beans. Sheesh! They sure were pretty in the bowl though.
I ended up using them in a pasta dish I made up: lemon pepper papardelle tossed with a can of chopped artichoke hearts, lemon juice, butter and the beans. I added the beans to the water for the last two minutes of cooking. It was a good dinner, but there’s no way those beans were worth the effort.

Shannon — We went with Full Belly Farms. So far so good, but I’m a little bummed because in the very first newsletter they sent they told us that they killed their entire stone fruit crop so we’ll have NO PEACHES this summer. I’m devastated.
